Why your wooden handle needs care

Wood is a living material: it absorbs and releases moisture and reacts to changes in temperature and humidity. Without care, a knife handle can warp, crack or dry out.

With the right care, a handle stays supple, retains its colour and feel, and can last for decades without unnecessary wear or risk of breakage. Hardwood handles, including olive, cherry, walnut and beech, particularly benefit from regular care.

Caring for your wooden handle, step by step

    1. Clean gently: wipe the handle with a soft, damp cloth. Do not soak it.
    2. Dry thoroughly: dry it immediately after cleaning. Storing wood damp for long periods can lead to mould.
    3. Apply care oil: apply a thin layer of food-safe oil, such as linseed, walnut or mineral oil, or our F. Herder knife oil, for protection and shine.
    4. Allow to soak in: leave the oil for about 30–60 minutes, then remove excess with a dry cloth.
    5. Repeat regularly: every 1–3 months is generally sufficient, depending on use. Daily use may require more frequent care.
    6. Extra protection for heavy use: use a wax mixture, such as oil and carnauba wax, for heavily used handles.

    Mistakes to avoid

    • Dishwashing: heat and moisture cause wooden handles to swell, crack or loosen.
    • Prolonged soaking: never leave the handle in washing-up water, as wood absorbs moisture.
    • Direct heat: do not dry it on a radiator or in strong sunlight, as the wood may crack.
    • Unsuitable oil: ordinary olive or sunflower oil can turn rancid. Use oils specifically intended for wood care.

Frequently asked questions about wooden handle care

    Which oil is best?

Resin-free linseed oil is a classic. Walnut oil, mineral oil and specially formulated knife oils such as F. Herder care oil are also suitable.

Can I use olive oil or ordinary cooking oil?

No. Ordinary cooking oil can become rancid and sticky. Only use wood oils approved for food contact.

How often should I oil the handle?

Depending on use, about every 1–3 months in an ordinary kitchen. Heavily used handles may need monthly care.

What should I do about small cracks?

You can sand them lightly and reapply oil. Have deeper damage professionally repaired.

Can a wooden-handled knife go in the dishwasher?

No. Heat, moisture and aggressive detergents can cause handles to swell, fade and, in the worst case, crack.
